What he is building
What Kristian is crafting extends beyond a menu. Each dish carries its own narrative—a quiet commitment to sourcing, technique, and purpose that binds the plate to its provenance. The breakfast table honours a tradition first established at Hôtel du Nord in 1837, while the Bistrot finds its rhythm in seasonal, local produce.
«There is no middle ground,» he notes. «No 'good enough.' Only the uncompromising choice and the proper way of doing things, even when no one is watching.»
What he wants guests to remember
Ask Kristian what he hopes guests leave with, and he speaks neither of technique nor accolade. «I hope every person who leaves Villa Nord remembers every single bite,» he says—«from morning breakfast to the café, through to the Bistrot.»
