Classics without ego open the list, setting the tone for the evening. Downstairs, Bespoke 1837 keeps a low light and a long evening, an intimate close to the day, built on local products from our selected partners.
The menu is written like a book, in chapters, and The Bitter Trade turns its boldest page: a selection of negronis served as a flight of small pours, each a twist on the classic. Our signature bar snacks are served beside it, all evening.
Signature bar snacks, made properly
The signature bar snacks are brought out all evening beside the bar. Small Trøndelag shrimp are crisped and eaten by hand, dusted with truffle and Lofoten seaweed.
The oysters are dressed by our own hand, with gels pressed from fruit and vegetable, a quiet study in flavour, touch and texture.
Honouring the seasons
The programme flows with the seasons: Trondheim heritage ingredients, French technique, Mediterranean flavour. What grows, swims or ripens near the city decides what is poured.
Alongside the kitchen, pairings for every drink can be enjoyed, an all-round experience for our guests.
