The Bistrot is the evening heart of Villa Nord, a culinary lineage carried since 1837. Classical French technique meets honest Nordic provenance: coast and high mountains, treated with the same rigour.
A focused card and tasting menu of pure flavours, with complex non-alcoholic pairings, served with quiet, unpretentious depth in a room made for lingering.
Before the kitchen opens, the room keeps the aperitivo hour: from 16:00, spritzes poured from The Afternoon Manifest, The Citadel, The Garden and the Pickled Cucumber Sour among them, with our signature bar snacks served alongside.
Classic sauces, Norwegian larder
The method is French and patient: classic sauces like beurre blanc and béarnaise, a proper jus, translated into a Villa Nord twist.
The larder they draw from is Norwegian: turbot and langoustine from the coast, forest mushrooms, brown crab, Trøndelag berries. Local product, in its season.
A house classic
The beef tartare is the fixed point of the card, a house classic among the starters.
The card itself follows the season, written from what the coast and the forest send in.
